This page is dedicated to the details of my journey to a more paleo and diabetic friendly lifestyle.  I am diabetic, and currently on medication that doesn't seem to do much for me.  Over the past four years since the diagnosis, I have been exploring and researching ways to get through this.  I want to live a long, healthy life.  Many times, I have failed.  Quite a few times, doctors have failed me.  It's a lose, lose situation, or so it seems.  I hope that something that I post here will help someone that is suffering from any kind of illness.  It is my belief that our bodies were built to last, and that we make choices that break them down faster.  On this page, I will detail my highs, lows, ups, downs, trials and triumphs.  This isn't meant to be a substitution for medical or dietary advice, so please don't get upset with me if what I am doing doesn't work for you.  If I do or say something that DOES help you, please let me know, as seeing other friends succeed as helped me to want to stay on track.

Day 1:  My fasting blood sugar was nearly 300.  I have been taking my diabetic meds religiously.  However, I know that my diet could be better.  I'm not doing too badly, but I have been living and enjoying the good life and have been eating things that I should not eat.  I know this is true, and it's up to me to do better.  I already know how to eat paleo.  I've read the books, I've taken Paleo Bootcamp, I've watched videos.  It's a no brainer, really.  I think that my main hold up is money, and a busy family that loves junk food.  It's not their fault that I have become so undisciplined, and I know that I can do better.  I had bacon and eggs for breakfast.  My blood sugar did not go down at all.  It made me really angry, because a high protein breakfast usually knocks it right down.   For lunch, I had a salad with rotisserie chicken on it, and for dinner, I had a combination of cauliflower and meatza, which turned out to be the best alternative to pizza that I have ever had.  It was great.  I felt no need to snack in between meals.  My blood sugar was still too high, though.

Day 2:  Fasting blood sugar was in the 230's.  That's still way too high, but it's down some.  I had eggs for breakfast, a big salad for lunch along with spinach/broccoli/mushrooms that were stir friend in olive oil.  For supper I made individual "meatza" with hamburger patties, and ate leftover veggies from lunch.  Again, no snacking needed.

Day 3:  My blood sugar was finally under 200.  Whooo hooo!!!  This day was  my husband's birthday.  It's really too soon to have a cheat day, but I planned to cheat carefully.  I was not hungry for breakfast, which is unusual for me, but I rolled with it and had a great lunch later on.  Lunch consisted of home made broccoli cheese soup.  That was a simple concoction of chopped broccoli, velveeta cheese and almond milk.  I paired that with a tossed salad that had a bit of leftover rotisserie chicken and an avocado.  My eyes were bigger than my stomach.  I couldn't eat all of that soup and salad, so I just ate until I was comfortably full.  No need for snacking.  For supper, my cheat was tacos made with corn tortillas, ground beef, cheese and tomatoes.  We made home made ranch and French onion dip, which I ate with corn chips.  I made a sugar free birthday cake and used a combination of sugar free pudding cool whip to make the icing.  That was not a paleo dinner, but I did my best to control sugar.  I do not expect the greatest blood sugar reading in the morning due to the cake, corn chips and corn tortillas, but I know that I minimized the impact by not having potato chips, flour tortillas, or a regular cake.

Day 4:  My blood sugar was back up to 254.  ARRRRRGGGGG!!!!!  I also woke up ravenously hungry, so obviously, having carbs last night, no matter how sugar free they were, did not do me any favors.  Having leftover broccoli cheese soup for breakfast. Lunch was late.  I roasted a bunch of country style ribs with Claude's Brisket Marinade.  Incidentally, Claude's is the only marinade or sauce that I have found so far that has no sugar or carbs in it.  I'm sure that there are more things in the world, but I live in a small town.  We had ribs for lunch, and then continued having them whenever we felt like having them throughout the rest of the day.  After supper (there was no official supper time), I got a craving for deviled eggs, so I have the eggs boiling as I write this.  My deviled eggs are simple.  I just hard boil the eggs, halve them, mash the yolks with mayo and a splash of vinegar and that's it.  If I have any dill relish, I might use it.  Other than that, my deviled eggs are easy.

*Let me add a little background information.  A few of you probably looked at the above menu and shrieked in terror.  There's a lot of cholesterol in those eggs!!!!!  How could you eat that fatty meat?  I have done this before, and during the time of my dieting journey, have been to the doctor for lab work.  I'm diabetic and hypothyroid, so this lab work has to happen.  When I am on this particular diet, my blood pressure, cholesterol and all other areas are perfect.  If I get off of this plan for any length of time, all of my lab work goes crazy.  For some reason, my body doesn't like carbs, other than those found in vegetables.  It can be very discouraging!
